It has a bit of a spicy taste. I love it in this soup. I am making as many batches as I can and freezing them for winter's cold nights. I think Swiss chard could be substituted for the kale. Grocery stores probably have kale. It grows best in colder climates and will take some frost, I think. This is the second year I've grown kale but the first year I've really used it. Phil used to put it in his homemade V-8 drink but not this year.
