KALE AND BEAN SOUP ON MY COOKBOOK SITE


A very tasty, easy, cheap soup. Click here. I made two double batches and froze the soup in 32 oz. yogurt containers. This winter, when the kale is frozen I can still have this tasty summer soup.

Kale is a green--related to the cabbage family but grows more like a chard as it doesn't make a head like cabbage does. It has a bit of a spicy taste. I love it in this soup. I am making as many batches as I can and freezing them for winter's cold nights. I think Swiss chard could be substituted for the kale. Grocery stores probably have kale. It grows best in colder climates and will take some frost, I think. This is the second year I've grown kale but the first year I've really used it. Phil used to put it in his homemade V-8 drink but not this year. All of it is going in the soup!
